White Chocolate Cranberry Oatmeal Cookies

Delicious egg-free cookies with cranberries and white chocolate. They keep their shape--no flat cookies! Experiment with different types of chocolate, fruits, and nuts to get them just how you like them.
  • 1 cup butter
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1½ tsp vanilla
  • 1½ cups flour
  • ¼ tsp salt
  • 1 tsp baking soda
  • ¼ cup boiling water
  • 2 cups quick oats
  • 1¼ cups white chocolate chips
  • ½ dried cranberries
  1. Preheat oven to 350.
  2. Put water on to boil.
  3. Mix butter, brown & white sugars and vanilla thorougly. Add in flour and salt. Mix.
  4. Dissolve baking soda in boiling water and mix into dough.
  5. Mix in oats, white chocolate and cranberries.
  6. The dough will be thick and not gooey. Form into 1½″ balls and put on lightly greased cookie sheet (I prefer to use parchment paper).
  7. Bake for 9-11 minutes.
