Super Duper Blueberry Muffins

April 29, 2011 by abbie 182 Comments

I toyed around with a blueberry muffin recipe this morning and attempted to pack them full of good-for-you ingredients.  The kids could barely stand the wait while they smelled them baking, so as soon as the muffins reached a somewhat-edible temperature, they began scarfing them down. Elliott declared them "super duper good". Alex said, "Most awesome blueberry muffins ever!" And me? I'm in awe of the fact that I just baked the first muffin that I didn't feel the need to spread … [Read more...]

I’m a Baaaad MoFo! Healthy Blondies?

October 29, 2010 by abbie 2,968 Comments

Hello! After months of being an absentee blogger, I'm back.  I want to thank all of you who sent emails to check on me and to remind me that I'm loved.  You all are so kind! Love you to pieces. So, let's get to business.  For my first post-hiatus trick, I give you......Bad MoFos*! Bad MoFos are kind of a hybrid recipe I came up with.  I started with my favorite cookie recipe and tried to turn it into a cross between a cookie and a granola bar.  See, during my absence, Shayne and I have … [Read more...]

Fried Eggplant

January 28, 2010 by abbie 194 Comments

Growing up, one of my very favorite things for my mother to cook with dinner was fried eggplant.  It wasn't something we ate often, so I was always thrilled when I spotted a beautiful eggplant sitting in the fridge after a trip to the grocery store.  To me, it's the coolest looking produce in the market.  The shape, the color, the size...love it. It's has lots to offer nutritionally, as well.  Did you know: Eggplant is low in saturated fat, sodium, and cholesterol? Eggplant is high … [Read more...]

Dodger Bread

December 8, 2009 by abbie 513 Comments

Dodger Bread. It's old school.  It's country.  It's delicious. It was a staple on my grandmother's table.  Rarely did I eat a meal at my grandmother's house that she didn't have dodger bread hot and slathered in butter.  My mom carried on the dodger bread tradition at our family table each time she'd cook a pot of beans.  Or turnip greens.  Or a roast. It's not a pretty food.  It's not a fancy one, either.  But it's the perfect accessory to any chilly-day meal and satisfies like nothing … [Read more...]

Recipes I need to share

August 8, 2009 by abbie 1,209 Comments

Not too long ago, I went on a mission to try to replicate a recipe I had in NYC at an amazing Italian restaurant.  I was successful in creating something incredibly similar and was getting ready to share it here on my blog, when all of a sudden, Pioneer Woman launched a new recipe site, TastyKitchen.  I decided to post the recipe on there and have gotten great feedback!  Please treat yourself to one of the most delicious pasta dishes I have ever tried (if I do say so myself). It's a white … [Read more...]
